Similar to your classic ceasar salad but tastier! This high protein salad will fill your creamy and crunchy cravings!

Recipe – Crunchy Cashew Kale Salad

Ingredients:

  • 1 full bunch of dinosaur kale
  • 1 cup raw unsalted cashews
  • Dressing:
  • 1-2 garlic cloves (depending on how garlicky you like it)
  • Juice from 1 lemon
  • 4 tbsp. Raw hemp seeds
  • 2 tbsp. Nutritional yeast
  • 3 tbsp. Extra virgin olive oil
  • 1/4 cup water
  • sea salt
  • pepper

Instructions:

In a small food processor, process cashews until chopped into smaller pieces but not ground. Roll kale leaves and finely shred and set aside in large salad bowl. Poor cashews on top of kale and rinse out food processor. Add garlic to food processor and mix until minced. Add lemon juice,  hemp seeds, nutritional yeast, olive oil, water, salt and pepper. (Note: you may have to add more water or lemon juice if it is too thick). Pour dressing on kale and cashews mix and serve!
